Holden ute cake on a beach for 21st birthday

Scott's cousin celebrated his 21st this weekend. He owns a black Holden Ute, which he loves, so we decided to make him a cake of his car.

Everything on the cake is edible and moulded mostly from fondant. Black fondant is always difficult to work with as so much colouring is required to create black that the icing becomes dry and cracks easily. This quantity of black would have taken forever to knead, luckily my wonderful husband stepped in and gave me a hand which was greatly appreciated! I tried to avoid cracking by glazing the car with a petal glaze, this worked as no further cracks formed after I applied the glaze.

The sand around the car is blended shortbread biscuits. In the past I have used brown sugar to create sand but I have never required this quantity - I thought the volume of sugar in this case would ruin the cake. I am very happy with the look of the sand and will use blended shortbread in the future as opposed to brown sugar.

  • time to make: 9 hours
  • favourite part: the rear headlights and sand
  • biggest challenge: cracking black fondant and shaping the cake

Red velvet cupcakes with a little help from a friend - @annasamara

When Jo and Luke asked me to make their engagement cupcakes I was very happy. I really wanted to create something perfect for a very special couple. Jo requested a red velvet cupcake tower with a cake for cutting on top of the tower. I have not baked red velvet before but knew that the lovely @annasamara is an amazing baker and an old hand at red velvet cakes.

Anna agreed to help out and baked 130 delicious red velvet cupcakes. I did what I like to do best and decorated Anna's hard work with cream cheese icing and moulded dark chocolate hearts to display on each cupcake.

I created and decorated the top cake which was my speciality - vanilla sponge :)

I loved working with Anna and was so confident in her ability to bake fantastic tasting cupcakes - everyone at the party agreed.

Thank you Anna <3

The groom's cake

This week I attempted my first groom's cake. A groom's cake is  a comical cake displayed at the wedding reception. The bride and groom chose this funny scene where the bride is upset because the groom has passed out drunk post wedding festivities.

This cake was very entertaining and fun to make. While fun, this is one of the hardest cakes I have done. I don't have much experience moulding figures or creating furniture.

The cake is a plain sponge with vanilla icing. Everything has been created out of fondant and cake, the only part of the cake that isn't edible is a cardboard support for the bed board.

I hope the bride and groom enjoyed the laughs the cake hopefully found!

  • time to make: 16 hours
  • favourite part: the groom
  • biggest challenge: moulding figures, perfection required for edgings and furniture

Barbie cake for 3 year old Tereneah

Unfortunately I forgot to take photos of this cake. We took photos in the car on delivery with my iPhone.

This cake is a raspberry swirl with marshmallow icing and marshmallows between the layers. Everything on the cake I made from fondant apart from the wings and necklace that came with the Barbie, which were too pretty not to use!

The dress was more challenging than the last Barbie cakes I have made. Raspberry swirl cake is light and tended to fall apart as I was shaping the dress. I will stick to a dense cake for any future Barbie cakes.

This design took 6 cakes, about 1kg of fondant and a giant bowl of marshmallow icing.
  • time to make: 8 hours
  • favourite part: making Barbie's dress
  • biggest challenge: creating a grass look with fondant, I don't think I am quite there yet

Helping my cousin, Ashley, to make her first cake

My cousin Ashley came over on Saturday to make her first decorated cake which was a gift for her boyfriend. Ashley's boyfriend enjoys taking motorbikes off road so we made a cake of a country road and hill with a motorbike. It was great fun working with Ashley and she did an awesome job with this cake! We filled the sponge cake hill with M&M's Flake, mint Aero and way too much chocolate butter icing. We created the decorations out of fondant and used piping gel for water, Lindt chocolate flakes for the dirt road and mashed aero for moss on the rocks.

I am definitely up for decorating cakes with someone else again!

Matt and Jamie's wedding cake - a cupcake tower

Early 2010 I made an engagement cake for Matt and Jamie. Today I created their wedding cake.

The cake topper was marble chocolate and vanilla. I created all the decorative flowers from fondant and covered the cakes with fondant. The cupcakes were a combination of chocolate and vanilla with royal icing.

All the 100 odd guests were given a cupcake in a white box.

The wedding was lovely and I feel very lucky to have been apart of their special day.

  • Time to make: 14 hours
  • Favourite part: Making the flowers
  • Biggest challenge: Piping 120 cupcakes

Lollipop cake

Lollipop-cake

It is my mum's birthday and I decided to make something really fun for her cake. What is more fun than lollipops?

The cake is sponge with chocolate icing. I created the lollipop with fondant - it was a little fiddly and there are a few imperfections but really lollipops aren't perfect either, right?

The stick is also fondant, I mixed a brown and then threw some black in and lightly mixed to make the swirl look. The ribbons are fondant shredded.

The sour worms and liquorice all sorts are authentic - I couldn't mess with people's taste-buds that much!

Time to make: 3 hours

Favourite part: the swirls

Biggest challenge: the swirls!

Angry birds cake

Angry Birds cake was more of a challenge for myself. I don't have a home for it yet, so if you want it we can work something out :)

The cake is vanilla with chocolate icing. I moulded the birds and pigs out of fondant. The tower is LCMs covered in fondant - to make the wood grain I scraped the fondant and hand painted the blocks in different shades of brown. The paint is made of icing gel and colouring.

Time to make: 8 hours

Favourite part: the birds

Biggest challenge: making the tower and keeping it from falling over

Disappointment: how glossy the tower is, I would have preferred a matt finish
